My Great Big Greek Salad

(Some parental participation required)

The red and yellow peppers give this salad an especially good flavor. Marinate for several hours and is tasty served the next day.

You will need:

1 red bell pepper

1 yellow bell pepper

1 green bell pepper

1 cucumber

2 tablespoons lemon juice

3 tablespoons red wine vinegar

¼ teaspoon dried oregano

4 ounces crumbles feta cheese

Wash your hands well and read all the directions.

1. With your kitchen scissors slice all the peppers into a bowl.

2. Ask an adult to help you slice the cucumber with the skin on.

Add to the peppers.

3. Measure lemon juice, vinegar and oregano in a small bowl and whisk together. Pour over peppers and mix well.

4. Cover and marinate.

5. Toss well before serving.

6. Top with crumbled feta cheese.

Serve with pita bread cut into wedges with your scissors.
